Zucchini Della Casa

6 Zucchini (Cut in half lengthwise)

3 TBSP olive oil

Salt to taste

Fresh ground pepper

Grated parmesan cheese

2 Cups chicken stock

In a skillet with a lid, Sauté the zucchini until lightly browned on the cut side.  Add stock and simmer covered until barely tender.  Remove from heat, drain the zucchini in a shallow baking dish.  Sprinkle with salt, pepper and cheese.  Place uncovered in a 350 degree oven for 15 minutes.  Serve at once.
